Ingredients
  

For the Muffins
  • 2 pieces ripe bananas The browner the better.
  • 2 pieces eggs They help hold everything together.
  • 2 cups rolled oats Old fashioned oats work best.
  • 1 teaspoon baking powder For lift.
  • 1/3 cup milk Any dairy or non-dairy milk works.
  • 1 teaspoon vanilla extract Optional, but enhances flavor.
  • 1 teaspoon cinnamon Optional, adds warmth.
  • 1 pinch salt Enhances flavor.
Optional Add-ins
  • 1/2 cup mini chocolate chips For a chocolatey touch.
  • 1 cup blueberries Fold in gently if using.
  • 2 tablespoons peanut butter For a delicious swirl.
  • 1/4 cup chopped nuts For added crunch.
  • 1/4 teaspoon nutmeg or pumpkin pie spice For a fall flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the eggs, oats, baking powder, milk, vanilla, cinnamon, and salt. Mix until well combined.
  4. Let the batter sit for 5 minutes to allow the oats to soak up the liquid.
Baking
  1. Line a muffin tin with paper liners or grease it well.
  2. Portion the batter into the muffin cups, filling them about 3/4 full.
  3. Bake for 18 to 22 minutes, or until a toothpick comes out mostly clean.
  4. Cool the muffins in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These muffins are freezer friendly. Store in an airtight container at room temperature for up to 2 days, refrigerate for up to 5 days, or freeze for up to 2 months.
