Easy Baked Broccoli Cheese Balls

Ingredients
  

For the filling
  • 2 cups finely chopped broccoli florets (steamed or microwaved until just tender, squeezed dry) Make sure the broccoli is dry for crispiness.
  • 1.5 cups shredded sharp cheddar cheese Freshly shredded yields better results.
  • 2 large eggs, beaten
  • 0.75 cups breadcrumbs (plain or panko) Use panko for extra crispiness.
  • 0.25 cups grated Parmesan
  • 2 tablespoons finely chopped onion or green onion
  • 1 small clove garlic, minced
  • 0.5 teaspoon salt, plus more to taste
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika or smoked paprika
  • as needed Olive oil spray or a light drizzle for baking

Method
 

Preparation
  1. Cook the broccoli until just tender, then chop it very fine. Press out extra moisture using a clean towel or paper towels.
  2. In a large bowl, combine the broccoli, cheddar, eggs, breadcrumbs, Parmesan, onion, garlic, salt, pepper, and paprika. The mixture should feel moist but not loose. If it seems too wet, add 1 to 2 tablespoons more breadcrumbs.
  3. Scoop about 1 heaping tablespoon per ball and roll gently. Wet hands help if the mixture sticks.
  4. Pop the tray of shaped balls into the fridge for 15 minutes to help them keep their shape.
Baking
  1. Arrange the balls on a parchment-lined sheet and spray or lightly drizzle with olive oil.
  2. Bake at 400°F for 14 to 18 minutes, turning the tray once, until golden and crisp.
Finishing
  1. Let them rest for 5 minutes before serving so the cheese settles. Serve with your favorite dip.

Notes

For variations, consider adding a pinch of red pepper flakes or swapping in smoked cheddar. You can also make the mix in advance, shape, and chill it before baking.
