  • 6 large large eggs, hard boiled and peeled For best results, cool them in an ice bath.
  • 1 ripe avocado Choose one that gives slightly when pressed.
  • 1-2 tablespoons lime juice, plus more to taste Adjust according to personal preference.
  • 1 tablespoon mayonnaise or Greek yogurt Optional, for extra creaminess.
  • 1 small clove garlic, finely grated, or pinch of garlic powder For added flavor.
  • 2 tablespoons chopped cilantro Optional, for garnish.
  • Salt and black pepper To taste.
Optional Toppings
  • smoked paprika For garnish.
  • diced jalapeno For added spice.
  • diced tomato Can be used, make sure to pat dry.
  • crumbled bacon For a savory topping.

Method
 

Preparation
  1. Hard boil your eggs, then cool them completely using an ice bath for easier peeling.
  2. Slice the eggs in half lengthwise and gently pop the yolks into a bowl.
  3. Add the avocado to the bowl with the yolks and mash until mostly smooth.
  4. Mix in lime juice, mayo or yogurt if using, garlic, cilantro, salt, and pepper. Taste and adjust seasoning.
  5. Spoon or pipe the filling back into the egg whites.
  6. Top with smoked paprika or any toppings you prefer.

Notes

Best enjoyed the day they are made. If prepping in advance, store egg filling with plastic wrap pressed onto the surface to reduce browning.
