- Chop the kale and remove the thick stems. Cut the leaves into bite-sized pieces.
- Massage the kale with a pinch of salt and a drizzle of oil, or a spoonful of dressing, for about a minute until it turns a darker green and feels softer.
- Add the cooked chicken and break up any big chunks.
- Add the apple or pear, dried cranberries, nuts, and onion if desired.
- Add dressing slowly, tossing and tasting as you go. Adjust seasoning with more dressing, salt, or pepper until it tastes just right.
- Finish with extras like Parmesan, an extra handful of nuts, or a few more cranberries on top.
Notes
Store leftovers properly to keep kale crisp. Put dressing at the bottom of the container when packing lunches.
