Ingredients

Slaw base
  • 1 bag coleslaw mix (or a mix of thinly sliced green and red cabbage) Use a pre-made mix for convenience.
  • 2 medium carrots, shredded Most mixes include shredded carrots.
  • 3 stalks green onions, sliced Adds a fresh bite.
  • 1/4 cup cilantro (optional) Great for added flavor if you like it.
  • 2 tablespoons toasted sesame seeds For added crunch.
Sesame ginger dressing
  • 1/4 cup neutral oil (such as avocado or canola)
  • 1 tablespoon toasted sesame oil A little goes a long way.
  • 3 tablespoons soy sauce or tamari For a gluten-free option, use tamari.
  • 2 tablespoons rice vinegar A good alternative is apple cider vinegar.
  • 1 tablespoon honey or maple syrup For a touch of sweetness.
  • 1 tablespoon fresh ginger, grated Fresh is recommended for better flavor.
  • 1 clove garlic, minced or grated
  • 1 squeeze lime (optional) For extra zip.

Method

Preparation
  1. Grab your biggest bowl. If you use a tiny bowl, you will regret it the second you start tossing.
  2. Make the sesame ginger dressing in a cup or small bowl. Taste it and adjust it to your preference.
  3. Add your slaw mix and any extras, then pour the dressing over and toss until glossy and evenly coated.
  4. Let it sit for about 10 minutes before serving. It softens just a touch but stays crunchy.

Notes

You can mix the dressing up to 3 days ahead and keep it in a jar. The slaw itself is best within 24 hours for freshness.
