  • 4 cups arugula Baby arugula is preferred for tenderness.
  • 1/2 cup shaved Parmesan cheese Use a wedge for the best taste; pre-shaved works too.
  • 1 medium lemon, juiced Fresh juice is essential for brightness.
  • 3 tablespoons olive oil Use high-quality olive oil for the best flavor.
  • 1 pinch salt Adjust to taste.
  • 1 pinch black pepper Freshly cracked is recommended.

Method
 

Preparation
  1. Add arugula to a large bowl.
  2. Drizzle olive oil over the arugula and toss gently to coat.
  3. Squeeze fresh lemon juice onto the salad and toss again.
  4. Add a pinch of salt and a few cracks of black pepper, then toss.
  5. Finish with shaved Parmesan on top and give it one last gentle toss.

Notes

Serve immediately for the best texture. If making ahead, keep arugula dry and store cheese separately.
