Ingredients
  

Muffin Ingredients
  • 2 medium medium apples, peeled & diced Honeycrisp is preferred for sweetness.
  • 2 cups all-purpose flour Can use half whole wheat for a denser texture.
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon nutmeg Optional.
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup plain yogurt or sour cream
  • splash to taste milk If batter seems too thick.
Topping Ingredients
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
Glaze Ingredients
  • ½ cup powdered sugar
  • 1-2 tablespoons milk
  • ½ teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (about 175°C) and prepare your muffin tin with liners or non-stick spray.
  2. In a large bowl, mix together the flour, baking powder, baking soda, spices, salt, and both types of sugar.
  3. In another bowl, whisk together the eggs, vanilla, melted butter, and yogurt (or sour cream).
  4. Combine the wet ingredients into the dry ingredients, stirring gently until just combined. Lumps are okay.
  5. Fold in the chopped apples and swirl in the mixed sugar and cinnamon for added flavor.
Baking
  1. Scoop the batter into the muffin tin and bake for about 18-22 minutes until a toothpick comes out clean.
  2. Allow the muffins to cool for 10 minutes before drizzling with glaze if desired.

Notes

Enjoy these muffins warm with coffee or tea. They freeze well for about three months.
