Preparation
- Preheat your oven to 350°F (about 175°C) and prepare your muffin tin with liners or non-stick spray.
- In a large bowl, mix together the flour, baking powder, baking soda, spices, salt, and both types of sugar.
- In another bowl, whisk together the eggs, vanilla, melted butter, and yogurt (or sour cream).
- Combine the wet ingredients into the dry ingredients, stirring gently until just combined. Lumps are okay.
- Fold in the chopped apples and swirl in the mixed sugar and cinnamon for added flavor.
Baking
- Scoop the batter into the muffin tin and bake for about 18-22 minutes until a toothpick comes out clean.
- Allow the muffins to cool for 10 minutes before drizzling with glaze if desired.
Notes
Enjoy these muffins warm with coffee or tea. They freeze well for about three months.
