  • 1 cup Granulated sugar Divided for use

  • 1/2 teaspoon Cream of tartar Stabilizes egg whites

Method
 

Preparation
  1. Preheat the oven to 325°F and position the oven rack in the lower middle.
  2. Sift the cake flour, half of the sugar, and salt together.
  3. In a clean bowl, beat egg whites until foamy, then add cream of tartar and continue until soft peaks form.
  4. Gradually add the remaining sugar while mixing, beating until glossy medium peaks form.
  5. Mix in vanilla extract and citrus zest, combining quickly.
  6. Gently fold the flour mixture into the egg whites in 3 to 4 additions.
  7. Spoon batter into an ungreased tube pan and smooth the top lightly.
Baking
  1. Bake for 35 to 45 minutes, until golden and springs back when tapped.
  2. Cool the cake upside down completely before removing from the pan.

Notes

Use a clean bowl and beaters; any grease can hinder egg white whipping. Do not grease the pan to ensure the batter climbs properly. The cake can be served with fruit, whipped cream, or ice cream for added flavor.
