Ingredients
  

For the Chicken
  • 2 pieces boneless skinless chicken breasts Can substitute thighs, adjust cooking time accordingly.
  • 1 tablespoon olive oil Can also use avocado oil.
  • 1 teaspoon garlic powder Part of the seasoning blend.
  • 1 teaspoon smoked paprika Adds flavor and color.
  • 1 teaspoon onion powder Part of the seasoning blend.
  • to taste salt To taste.
  • to taste pepper To taste.
For the Potatoes
  • 4 medium potatoes Yukon golds or russets recommended, can also use baby potatoes.
  • 1 tablespoon olive oil For crisping the potatoes.
  • 1 teaspoon Italian seasoning Optional for extra flavor.

Method
 

Preparation
  1. Preheat the air fryer if required by your model.
  2. Cut potatoes into even chunks around 1 inch. Toss with olive oil and seasoning.
  3. Air fry potatoes at 380°F for 10 to 12 minutes to get them started.
  4. While the potatoes begin cooking, pat chicken dry and coat with olive oil and spice blend.
Cooking
  1. After 10 to 12 minutes, remove the potatoes and scoot them to the sides of the basket.
  2. Place the chicken breasts in the center of the basket.
  3. Continue cooking for another 9 to 12 minutes, flipping the chicken halfway through.
  4. Check chicken doneness with a thermometer, aiming for 165°F.
  5. If necessary, leave potatoes in for extra minutes while chicken rests.

Notes

Serve with greens, sauces, or as a bowl-style dish with additional vegetables. Let chicken rest for 3 to 5 minutes before slicing to retain juices.
