Ingredients
  

Main ingredients
  • 4 cups cooked chicken, shredded or chopped rotisserie chicken is perfect
  • 1 can cream of chicken soup or cream of mushroom if preferred
  • 1 cup sour cream or plain Greek yogurt either works
  • 2 cups shredded cheddar cheese or a Mexican blend
  • 1 can diced green chiles optional for a kick
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt a pinch
Topping
  • 1 bag Doritos Nacho Cheese is classic, Cool Ranch is good too

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the chicken, cream of chicken soup, sour cream, diced green chiles (if using), half of the shredded cheese, garlic powder, onion powder, black pepper, and a pinch of salt until creamy.
  3. Spread the mixture evenly into a greased 9x13 baking dish.
Assembly
  1. Lightly crush the Doritos and scatter them over the top of the casserole.
  2. Sprinkle the remaining cheese over the chips.
Baking
  1. Bake in the preheated oven for 25 to 30 minutes, until bubbling around the edges and the cheese is melted.
  2. Let it sit for 5 to 10 minutes before serving.

Notes

Leftovers can be stored in an airtight container for up to 3-4 days in the fridge or frozen for up to 2 months without the Doritos. For best texture, reheat in the oven.
