Ingredients
  

For the salad
  • 2 pieces cucumbers, sliced English cucumbers are easiest, but any kind works.
  • 2 to 3 cups tomatoes, chopped Cherry tomatoes are sweet and reliable.
  • 1/4 cup red onion, thinly sliced Optional, but adds a nice bite.
  • to taste salt and black pepper
  • to taste fresh herbs like parsley or dill Optional, but enhances flavor.
For the dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • 1 clove garlic, grated or minced Optional, can substitute with garlic powder.
  • 1/2 teaspoon salt
  • to taste black pepper
  • 1/2 teaspoon honey Optional for sweetness.

Method
 

Preparation
  1. Slice the cucumbers and tomatoes and add them to a big bowl.
  2. Add onion and herbs if you’re using them.
  3. Pour the dressing over the salad and toss gently.
  4. Taste, then add more salt or pepper if needed.
  5. Let it sit for 5 to 10 minutes to allow the flavors to mingle.

Notes

You can meal prep the salad by storing chopped veggies with a paper towel on top and the dressing separate. Toss right before eating to avoid excess water.
