  • 1 block cream cheese, softened at room temp Use full-fat for a richer flavor.
  • 1 cup finely grated cucumber, peeled if the skin is tough Squeeze out as much liquid as possible.
  • 1 tablespoon fresh dill, chopped Or use 1 teaspoon dried dill.
  • 2 tablespoons finely minced green onion or chives
  • 1 teaspoon lemon juice Freshly squeezed is best.
  • 1 small clove garlic, grated or very finely minced
  • to taste Salt and black pepper
  • pinch onion powder or smoked paprika (optional) For added flavor.

Method
 

Preparation
  1. Grate the cucumber on the small holes of a box grater. Scoop it into a clean kitchen towel and squeeze out as much liquid as you can.
  2. In a bowl, beat the softened cream cheese until smooth using a fork or hand mixer.
  3. Stir in the cucumber, dill, green onion, lemon juice, and garlic. Season with salt and pepper to taste.
  4. Chill for at least 20 minutes to allow the flavors to blend. Serve on toast, crackers, or with veggies.

Notes

For a smoother texture, let the cream cheese sit at room temperature for 30 to 45 minutes before mixing. Drain the cucumber well to prevent the spread from becoming watery.
