  • 2 pieces fresh croissants, sliced in half Use flakey and buttery croissants for best results.
  • 2 large eggs Cook gently for tender results.
  • 2 slices cheese, such as cheddar or Swiss Choose cheese that melts well.
  • 2 to 4 slices bacon or a cooked sausage patty Optional protein for added flavor.
  • 1 tablespoon butter For cooking eggs and toasting the croissants.
  • to taste salt and pepper For seasoning the eggs.

Method
 

Preparation
  1. Toast the croissants lightly cut side down in a dry skillet for about 1 minute.
  2. Cook the bacon in a skillet until crisp or warm up a sausage patty.
  3. Melt butter in a nonstick pan over medium low heat, whisk eggs with salt and pepper, and pour them in the pan stirring gently until just set.
  4. Place cheese slice on top of warm eggs in the pan for about 20 seconds, covering briefly if needed.
  5. Assemble the sandwich starting with the bottom croissant half, add eggs and cheese, then bacon or sausage, and top with the other half.
  6. Optional: Return the whole sandwich to the pan for 30 seconds per side to warm and toast.

Notes

For make-ahead ease, cook bacon or sausage and store in the fridge. Assemble sandwiches just before serving for best texture. Avoid watery ingredients when storing or freezing.
