  • 2 pounds chicken (breasts or thighs) Chicken thighs are more forgiving and stay juicy.
  • 1/2 cup low sodium soy sauce Control the saltiness.
  • 1/4 cup honey or brown sugar Honey adds shine; brown sugar adds flavor.
  • 1/4 cup rice vinegar Apple cider vinegar can be used as a substitute.
  • 2 cloves garlic, minced Fresh minced is best.
  • 1 tablespoon fresh ginger, grated Dried ground ginger can also be used.
  • 1 tablespoon sesame oil Adds classic aroma and taste.
  • 1 tablespoon cornstarch For thickening the sauce.
Optional Toppings
  • green onions, sliced For garnish.
  • sesame seeds For garnish.

Method
 

Preparation
  1. Add chicken to the slow cooker.
  2. Whisk together the teriyaki sauce ingredients and pour over the chicken.
Cooking
  1. Cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours until the chicken is cooked through and tender.
  2. Shred or slice the chicken as desired.
  3. To thicken the sauce, stir a cornstarch slurry into the hot sauce and let it cook for an additional 10 to 15 minutes with the lid slightly cracked until glossy.
  4. Finish with optional sesame seeds and green onions if desired.

Notes

The flavor improves if stored overnight in the fridge. Leftovers are great on nachos or in salads. For a spicy kick, add sriracha or red pepper flakes to the sauce.
