Main Ingredients
  • 4 pieces Boneless skinless chicken breasts or thighs Thighs stay extra juicy.
  • 1 jar Jar of queso dip Choose one you like the taste of on its own.
  • 1 packet Taco seasoning
  • 1 can Can of diced tomatoes with green chiles Or plain diced tomatoes for milder taste.
  • 1 teaspoon Onion powder (optional)
  • 2 tablespoons Extra green chiles (optional)
  • 1 squeeze Lime (optional) For flavor at the end.

Method
 

Preparation
  1. Place the chicken in the slow cooker.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour diced tomatoes on top of the chicken.
  4. Spoon the queso dip over everything.
Cooking
  1. Cover and cook on low for 5 hours or until the chicken shreds easily.
  2. Once done, shred the chicken right in the crockpot.
  3. Stir everything together until creamy and well coated.
  4. Let it sit for 10 minutes with the lid on to thicken.
  5. Adjust consistency if needed with broth or by cracking the lid.

Notes

This recipe is forgiving and can easily accommodate various substitutions. Serve in different styles like tacos, nachos, or quesadillas.
