Preparation
- Pat the beef dry with paper towels to help the seasoning stick. Halve or quarter the potatoes depending on their size.
- Toss the beef and potatoes with salt, pepper, onion powder, and Italian seasoning. Add paprika for extra flavor if desired.
Cooking
- Place the potatoes on the bottom of the crockpot and the beef on top to help the potatoes cook in the drippings.
- Melt the butter and mix in the garlic, then pour it over the ingredients in the crockpot. Add a small splash of beef broth around the edges.
- Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours until the beef feels fork tender.
- If using, stir in a cornstarch slurry during the last 20 minutes of cooking to thicken the sauce.
Notes
Feel free to add vegetables like mushrooms, carrots, or green beans as desired. For a spicy kick, add red pepper flakes or hot sauce. Fresh herbs like parsley or chives can enhance the final dish, and a sprinkle of cheese can add richness.
