Crockpot Garlic Butter Beef Bites & Potatoes

Ingredients
  

Main Ingredients
  • 3 pounds Beef (chuck roast or sirloin, cut into bite-size chunks) Chuck gets super tender; sirloin stays a bit meatier.
  • 2 pounds Baby potatoes (Yukon gold or red, cut if larger) Aim for chunky pieces to prevent them from getting overly soft.
  • 1/2 cup Butter (unsalted) Real butter gives the best flavor.
  • 4 cloves Garlic (fresh minced) Fresh tastes brighter compared to jar garlic.
  • 1 cup Beef broth Just enough to help keep things juicy.
Seasonings
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Paprika (optional) Adds color and a smoky flavor.
Optional Ingredients
  • 1 tablespoon Cornstarch (for slurry) Use if a thicker sauce is desired.

Method
 

Preparation
  1. Pat the beef dry with paper towels to help the seasoning stick. Halve or quarter the potatoes depending on their size.
  2. Toss the beef and potatoes with salt, pepper, onion powder, and Italian seasoning. Add paprika for extra flavor if desired.
Cooking
  1. Place the potatoes on the bottom of the crockpot and the beef on top to help the potatoes cook in the drippings.
  2. Melt the butter and mix in the garlic, then pour it over the ingredients in the crockpot. Add a small splash of beef broth around the edges.
  3. Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours until the beef feels fork tender.
  4. If using, stir in a cornstarch slurry during the last 20 minutes of cooking to thicken the sauce.

Notes

Feel free to add vegetables like mushrooms, carrots, or green beans as desired. For a spicy kick, add red pepper flakes or hot sauce. Fresh herbs like parsley or chives can enhance the final dish, and a sprinkle of cheese can add richness.
