  • 30 oz diced hash browns or baby potatoes Use frozen hash browns for convenience without thawing.
  • 1 packet ranch seasoning Or a few tablespoons of homemade ranch mix.
  • 8 oz cream cheese Makes the sauce rich and smooth.
  • 2 cups shredded cheddar cheese Or a cheddar blend if preferred.
  • 2 tbsp butter Optional for added flavor.
  • 6 slices bacon Cooked and crumbled, optional but recommended.
  • 2 scallions green onions Chopped, optional for garnish.
  • 2 tbsp milk or broth Add if necessary to loosen the sauce.

Preparation
  1. Spray the slow cooker with nonstick spray or rub with a little butter.
  2. Add the potatoes and ranch seasoning to the slow cooker, then toss to coat.
  3. Dot in cream cheese, cover, and cook on low for 4 hours, or until potatoes are tender.
  4. Stir well, then add the shredded cheese, allowing it to melt.
  5. Finish with crumbled bacon and green onions if desired. Serve warm.

Notes

Keep the lid on to prevent heat loss. Add cheese near the end to avoid graininess. For thicker sauce, add milk or broth gradually. For a heartier meal, mix in cooked sausage, ham, or shredded chicken.
