Ingredients
  

Main Ingredients
  • 2 lbs chicken breasts or thighs Cut into bite-sized pieces.
  • 1 medium onion Chopped.
  • 3 cloves garlic Minced, can use pre-minced.
  • 1 inch ginger Grated or minced.
  • 1 can crushed tomatoes
  • 4 tbsp butter Non-negotiable.
  • 1 cup heavy cream or canned coconut milk Add before serving.
Spices
  • 2 tbsp curry powder
  • 1 tsp cayenne pepper Adjust according to spice preference.
  • 1 tbsp salt To taste.

Method
 

Preparation
  1. Place the chicken, onion, garlic, ginger, crushed tomatoes, and butter into the crockpot.
  2. Add curry powder, cayenne pepper, and salt. Stir to combine.
Cooking
  1. Cover and cook on low for 4 hours, or until the chicken is cooked through.
  2. About 15 minutes before serving, stir in the heavy cream or coconut milk.

Notes

Serve over fluffy rice or with naan. For leftovers, store in an airtight container in the fridge for up to 3 days or freeze for longer storage.
