Ingredients

Main ingredients
  • 1 pound ground beef or Italian sausage (or half and half)
  • 1 small onion, diced
  • 3 to 4 cloves garlic, minced
  • 1 jar marinara sauce (around 24 ounces)
  • 1 can crushed tomatoes (14 to 28 ounces, depending how saucy you like it)
  • 4 cups beef broth (or chicken broth)
  • 1 to 2 tablespoons tomato paste (optional but makes it richer)
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 to 2 cups lasagna noodles, broken into bite size pieces
For serving
  • 1 cup ricotta cheese for serving
  • 1 to 2 cups shredded mozzarella for serving
  • Parmesan, basil, or parsley optional but nice

Method

Preparation
  1. Brown the meat first by cooking it in a skillet with the diced onion until fully cooked. Drain extra fat if needed, adding garlic for the last 30 seconds to prevent burning.
  2. Transfer the browned meat mixture into the slow cooker and add marinara sauce, crushed tomatoes, broth, Italian seasoning, and tomato paste if using. Stir and season with salt and pepper.
  3. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
  4. About 25 to 35 minutes before serving, stir in the broken lasagna noodles and cover to allow them to soften.
  5. Ladle the soup into bowls and top each serving with a spoonful of ricotta, a handful of mozzarella, and a sprinkle of Parmesan.

Notes

Feel free to customize this soup with lighter meats, creamier options, or various vegetables. If you anticipate leftovers, cook noodles separately to maintain soup consistency.
