- 1) Place chicken in the bottom of your crock pot. Season with a little salt and pepper.
- 2) In a bowl, stir together the cream of chicken soup and sour cream. Add a splash of broth for consistency and pour this mixture over the chicken.
- 3) In the same bowl, combine the stuffing mix with broth until it's evenly moistened, then spoon the stuffing over the sauce. Avoid stirring it down into the sauce.
- 4) Cover and cook on low for about 4 to 6 hours, adjusting time based on chicken thickness.
- 5) Optionally, serve chicken whole or gently shred it and spoon stuffing over each plate.
Notes
Do not drown the stuffing - moisten it enough to keep it fluffy. If you like a slightly crisp top, broil the stuffing in an oven-safe dish for a few minutes after cooking. Great served with light sides like salad or steamed vegetables.
