  • 2 pounds Boneless skinless chicken breasts or thighs Thighs stay juicier compared to breasts.
  • 1 box Boxed stuffing mix, chicken or herb style
  • 10.5 ounces Cream of chicken soup
  • 1 cup Sour cream or plain Greek yogurt
  • 1 cup Chicken broth Use more if needed for moistening stuffing.
  • 1 teaspoon Onion powder (optional) For added flavor.
  • 1 teaspoon Garlic powder (optional) For added flavor.
  • 1/2 teaspoon Black pepper (optional) For seasoning.
  • 1 cup Frozen green beans or peas (optional) For added veggies.

Method
 

Preparation
  1. 1) Place chicken in the bottom of your crock pot. Season with a little salt and pepper.
  2. 2) In a bowl, stir together the cream of chicken soup and sour cream. Add a splash of broth for consistency and pour this mixture over the chicken.
  3. 3) In the same bowl, combine the stuffing mix with broth until it's evenly moistened, then spoon the stuffing over the sauce. Avoid stirring it down into the sauce.
  4. 4) Cover and cook on low for about 4 to 6 hours, adjusting time based on chicken thickness.
  5. 5) Optionally, serve chicken whole or gently shred it and spoon stuffing over each plate.

Notes

Do not drown the stuffing - moisten it enough to keep it fluffy. If you like a slightly crisp top, broil the stuffing in an oven-safe dish for a few minutes after cooking. Great served with light sides like salad or steamed vegetables.
