Preparation
- Drain the tuna and mix it with mayo, sriracha, soy sauce, rice vinegar (or lime juice), and optional ingredients.
- Taste and adjust seasoning as necessary.
Crispy Rice
- Heat a nonstick skillet over medium high heat and add neutral oil.
- Add the cooked rice, pressing it into a thin layer. Cook without stirring for 4-6 minutes until golden brown.
- Flip in sections and cook for another 3-5 minutes until crispy.
- Season with a pinch of salt and additional soy sauce if desired.
Assembly
- Let the crispy rice cool for a minute, then plate it as a base.
- Top with the prepared spicy tuna mixture.
- Add your chosen toppings: cucumber, avocado, seaweed, sesame seeds, and pickled ginger.
Notes
For a jammy fried egg on top of your rice, cook an egg while the rice crisps. Keep crispy rice separate from wet toppings when storing for meal prep.
