  • 1.5 to 2 pounds chicken tenderloins
  • 1/2 cup flour helps everything cling on
  • 2 large eggs whisked until smooth
  • 1 cup panko breadcrumbs for extra crunch
  • 3/4 cup finely grated Parmesan cheese the finer kind sticks best
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 to 2 tablespoons cooking spray or oil for baking

Preparation
  1. Heat oven to 425 F (220 C). Line a baking sheet with parchment paper or foil, and place a wire rack on top if you have one.
  2. Set up three shallow bowls: one with flour mixed with salt and pepper, one with whisked eggs, and the last with a mixture of panko, Parmesan, garlic powder, onion powder, paprika, and additional salt and pepper.
  3. Pat chicken dry with paper towels. Dip each piece first in flour, then in egg, and finally in the Parmesan mixture, pressing gently to help the coating stick.
Baking
  1. Place the breaded chicken tenders on the baking sheet. Lightly spray the tops with cooking spray.
  2. Bake in the preheated oven for about 16 to 20 minutes, flipping halfway through if not using a wire rack, until golden and cooked through.
  3. Serve hot with your favorite dipping sauces.

Notes

For extra crispy tenders, make sure to dry the chicken before breading, use panko breadcrumbs, and do not crowd the pan. You can store the cooked tenders in an airtight container in the fridge for up to 3 days, and reheat them in the oven or air fryer for best results.
