Main Ingredients
  • 16 ounces Velveeta cheese, cubed Use a 32-ounce block for larger gatherings.
  • 1 can Rotel (diced tomatoes and green chilies) Drain a little if you want it thicker.
  • 1 splash Milk (optional) Add if you like it extra smooth.
Optional Add Ins
  • Ground beef, chorizo, shredded chicken, or taco seasoning Add for a protein boost.
  • Diced jalapenos, chili powder, hot sauce, or salsa For added spice and flavor.
  • Cream cheese or sour cream For extra creaminess.

Method
 

Microwave Method
  1. Put the cubed Velveeta in a microwave-safe bowl.
  2. Microwave for 1 minute, stir, then continue in 30-second bursts, stirring each time until mostly melted.
  3. Stir in Rotel and heat for another 30 seconds if needed.
Stovetop Method
  1. Add cubed Velveeta to a saucepan on low heat.
  2. Stir often until melted, then stir in Rotel and warm through for 1-2 minutes.
Adjusting Texture
  1. If dip feels too thick, add a splash of milk and stir.
  2. If too thin, keep on low heat a bit longer.
  3. If heat is too high, pull off the burner, stir, and lower the heat.

Notes

Best served warm; you can keep it warm in a slow cooker or a bowl over simmering water.
