  • 4 pieces Chicken breasts or thighs Whatever you have available.
  • 4 cloves Garlic Fresh cloves preferred, jar garlic works in a pinch.
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 cup Chicken broth Low sodium preferred.
  • 1 cup Heavy cream Half and half can be used for a lighter sauce.
  • 1/2 cup Grated Parmesan cheese Freshly grated preferred.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Italian seasoning Can substitute with oregano.
  • 1/2 teaspoon Paprika
  • 1 cup Spinach or mushrooms Optional, for additional flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
  2. Pat the chicken dry with paper towels and season both sides with salt, pepper, paprika, and Italian seasoning.
Searing
  1. In a skillet, melt the butter with olive oil over medium heat and sear the chicken for 2 to 3 minutes per side.
  2. Add garlic to the skillet and stir for about 30 seconds, then pour in the chicken broth. Scrape up the browned bits from the pan.
Making the Sauce
  1. Turn down the heat and stir in the cream and Parmesan until the sauce is smooth.
Baking
  1. Place the chicken in the baking dish and pour the sauce over it. Bake for about 18 to 25 minutes until the thickest part reaches 165°F (74°C). Let rest for 5 minutes before serving.

Notes

For picky eaters, keep the sauce smooth and avoid visible ingredients like mushrooms. Optionally add spinach for extra flavor. Adjust seasoning as needed before serving.
