Ingredients
  

Bagel Dough
  • 2 cups bread flour (or all-purpose in a pinch) Bread flour is preferred for the best texture.
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon instant yeast
  • 3/4 cup warm water Make sure it’s warm for best results.
Filling and Toppings
  • 1 cup shredded cheddar cheese Plus extra for sprinkling on top.
  • 6 strips bacon, cooked and chopped Cook bacon until crispy.
  • 1/2 cup soft cream cheese For spreading or stuffing.
  • Olive oil For kneading and greasing.

Method
 

Preparation
  1. Combine flour, sugar, salt, and yeast in a mixing bowl and stir.
  2. Add warm water and mix until it looks messy and sticky.
  3. Knead on a floured surface for about 8-10 minutes until smooth.
  4. Fold in most of the cheddar and all the chopped bacon before it gets too stiff.
  5. Cover and let the dough rest until puffed, about 1 hour.
Cooking
  1. Divide dough into six pieces and poke holes in the centers.
  2. Boil each bagel for about 30 seconds on each side.
  3. Place on a parchment-lined baking sheet and sprinkle with extra cheese.
  4. Bake at 400°F until golden, about 20 minutes.
  5. Cool slightly before slicing and spreading cream cheese.

Notes

For achieving the perfect bagel texture, don't skip the boiling. Let the dough rise until puffy, not just for the clock. Brush a little egg wash on top before baking for a shiny finish.
