  • 3 cups frozen peas Sweet frozen peas are preferred for freshness.
  • 2 tablespoons butter Real butter gives the best flavor.
  • 2 tablespoons all-purpose flour Used to thicken the sauce.
  • 1.25 cups whole milk Whole milk is preferred for creaminess.
  • to taste salt Adjust seasoning as needed.
  • to taste black pepper Freshly ground is best.
  • a pinch sugar Optional, enhances sweetness of peas.

Method
 

Preparation
  1. In a small pot, simmer 3 cups of frozen peas in lightly salted water for about 3 to 5 minutes, just until hot. Drain and set aside.
Making the Sauce
  1. In the same pot, melt 2 tablespoons of butter over medium heat.
  2. Add 2 tablespoons of flour and whisk for about 30 seconds until it loses the raw flour smell.
  3. Pour in 1 and 1/4 cups of milk gradually, whisking continuously to maintain a smooth texture.
  4. Add salt, pepper, and a pinch of sugar if desired, and let the mixture bubble gently for 2 to 4 minutes until it thickens.
  5. Stir in the peas and warm for another minute. Taste and adjust seasoning.

Notes

Leftovers are great for quick lunches. Store in an airtight container in the fridge for up to 3 days or reheat gently with a splash of milk.
