Ingredients

Wonton Filling
  • 8 ounces cream cheese, softened Full-fat is best; let it sit out for 15 to 20 minutes so it is mixable.
  • 6-8 ounces canned lump crab, drained Opt for refrigerated crab if available.
  • 2 stalks green onion, finely chopped Adds fresh flavor and color.
  • 1 teaspoon garlic powder Easier than fresh garlic and spreads flavor evenly.
  • 1 tablespoon soy sauce Just a splash for savory flavor.
  • 12-16 pieces wonton wrappers Look for square ones in the fridge section near tofu.
  • 1 cup oil for frying Use a neutral oil like canola or vegetable.

Method

Preparation
  1. In a large bowl, combine cream cheese, crab, green onion, garlic powder, and soy sauce. Mix until well combined.
  2. Lay out wonton wrappers on a clean surface. Keep them covered with a damp towel to prevent drying out.
  3. Place about 1 heaping teaspoon of filling in the center of each wrapper.
  4. Wet the edges of the wrapper with a fingertip dipped in water, then fold and seal tightly to prevent leaks.
Cooking
  1. In a large skillet, heat oil over medium heat until hot.
  2. Fry wontons in batches until golden brown and crispy, about 3-4 minutes on each side.
  3. Remove with a slotted spoon and drain on paper towels.

Notes

These wontons can be made ahead of time. Fold and place on a tray, cover, and refrigerate for a few hours or freeze for later. Fry straight from frozen; just add a little extra time.
