Preparation
- Preheat the oven to 375°F. Lightly butter a 9-inch pie dish.
- Peel, core, and slice apples into 1/4 inch thick slices. Toss them with lemon juice, granulated sugar, brown sugar, flour, and cinnamon in a bowl. Set aside.
Make the Batter
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Stir in the milk, vanilla extract, egg, and melted butter until smooth.
Assemble and Bake
- Spread the prepared apple mixture evenly in the pie dish. Pour the batter evenly over and around the apples.
- Bake for 35 to 45 minutes, until the top is golden and the center is set. A toothpick inserted into the batter should come out clean.
Serving
- Let cool for 15 to 20 minutes before slicing. Serve warm, optionally with vanilla ice cream or whipped cream.
Notes
Rest the pie before slicing to allow the structure to settle. Can be made ahead by prepping apples a few hours in advance.
