Ingredients

Bar Ingredients
  • 1 cup butter, melted and cooled
  • 1 cup brown sugar for a cozy caramel flavor
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup white chocolate chips or chopped white chocolate
Frosting Ingredients
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • optional orange zest, extra cranberries, and white chocolate drizzle for garnish

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8 pan with parchment paper, leaving a little overhang.
  2. In a bowl, whisk the melted butter and brown sugar until glossy. Add eggs and vanilla, whisking again.
  3. Sprinkle in flour, baking powder, and salt. Stir until no dry flour remains, being careful not to over mix.
  4. Fold in dried cranberries and white chocolate, then spread the batter into the pan and smooth the top.
Baking
  1. Bake for about 18 to 24 minutes. The edges should be set while the center might still be slightly moist.
  2. Cool completely before frosting.
Frosting
  1. Beat cream cheese and powdered sugar until smooth. Add a splash of milk if too thick, or more powdered sugar if too loose.
  2. Spread frosting over the cooled bars, optionally garnishing with cranberries and drizzling with white chocolate.
Serving
  1. Chill for 20 to 30 minutes for clean slicing, then cut into triangles or squares.

Notes

For a perfect texture, chill bars before slicing and use parchment paper for easy removal. Can be frozen either unfrosted or frosted.
