Preparation
- Preheat your oven to 350°F (175°C) and line an 8×8 pan with parchment paper, leaving a little overhang.
- In a bowl, whisk the melted butter and brown sugar until glossy. Add eggs and vanilla, whisking again.
- Sprinkle in flour, baking powder, and salt. Stir until no dry flour remains, being careful not to over mix.
- Fold in dried cranberries and white chocolate, then spread the batter into the pan and smooth the top.
Baking
- Bake for about 18 to 24 minutes. The edges should be set while the center might still be slightly moist.
- Cool completely before frosting.
Frosting
- Beat cream cheese and powdered sugar until smooth. Add a splash of milk if too thick, or more powdered sugar if too loose.
- Spread frosting over the cooled bars, optionally garnishing with cranberries and drizzling with white chocolate.
Serving
- Chill for 20 to 30 minutes for clean slicing, then cut into triangles or squares.
Notes
For a perfect texture, chill bars before slicing and use parchment paper for easy removal. Can be frozen either unfrosted or frosted.
