Main Ingredients
  • 3 cups Cooked shredded chicken (rotisserie recommended) Use leftover chicken or rotisserie chicken.
  • 8 oz Cream cheese, softened Soften for easier mixing.
  • 1 cup Sour cream or plain Greek yogurt Greek yogurt makes it lighter.
  • 1 packet Ranch seasoning mix
  • 2 cups Shredded cheddar cheese Or a cheese blend.
  • 2 cups Cooked pasta, rice, or cauliflower rice Choose your preferred base.
  • 1/2 cup Bacon bits Optional but adds a delicious flavor.
  • 1/4 cup Green onions, sliced Optional for a fresh bite.
  • to taste Salt and pepper Only if needed.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a casserole dish.
  2. In a large bowl, mix the softened cream cheese, sour cream (or Greek yogurt), and ranch seasoning until smooth.
  3. Stir in the shredded chicken, cooked pasta or rice, most of the cheese, and bacon if using. Taste before adding salt.
  4. Spread the mixture into the greased casserole dish and sprinkle the remaining cheese on top.
Baking
  1. Bake in the oven for 20 to 25 minutes, or until the edges are bubbling and the top is golden.
  2. Let it sit for 5 minutes before serving to thicken and cool slightly.

Notes

This casserole is flexible – feel free to add veggies or adjust the cheese for a lighter version. Great as leftovers!
