Preparation
- Let the steak warm at room temperature for 15 to 20 minutes.
- Pat the steak dry and cut it into bite-sized chunks. Season well with salt, pepper, and paprika.
- Heat the cast iron skillet over medium-high heat and add a small splash of oil.
Cooking
- Sear steak bites in batches for 1 to 2 minutes per side until browned. Transfer to a plate and repeat.
- Lower the heat to medium, add butter and minced garlic and stir for about 30 seconds until fragrant.
- Add chili flakes, lemon juice, and chopped herbs to the butter mixture. Taste and adjust salt as needed.
- Return steak bites to the skillet and toss for 30 to 60 seconds until glossy and coated.
Notes
Do not overcrowd the pan to ensure a proper sear. Garlic can burn quickly, so keep it moving. You can modify the spices and herbs to your preference. Serve with a side that can soak up the extra sauce.
