For the Cowboy Butter Sauce
  • 1 cup Unsalted butter, melted So you can control the salt
  • 4 cloves Garlic, finely minced Fresh tastes best
  • 2 tablespoons Lemon juice Brightens everything
  • 1 teaspoon Dijon mustard Tiny amount, big flavor
  • 1/4 cup Fresh parsley, chopped
  • 2 tablespoons Chives or green onion, chopped
  • 1/2 teaspoon Red pepper flakes or cayenne Adjust to your heat level
  • 1/2 teaspoon Paprika Smoky if you have it
  • to taste Salt and black pepper

Method
 

Preparation
  1. Melt the butter gently in a small pan on low heat or in the microwave in short bursts. You want it melted, not sizzling.
  2. Stir in the minced garlic. If the butter is super hot, let it cool for a minute first to avoid harsh garlic flavor.
  3. Add lemon juice, Dijon mustard, paprika, red pepper flakes, salt, and pepper. Stir until it forms a smooth golden sauce.
  4. Mix in the chopped herbs last to keep them fresh.
  5. Taste the sauce. Adjust flavors by adding more lemon for tanginess, more salt if dull, or more pepper flakes for heat.

Notes

For a thicker consistency, let the sauce sit for 5 to 10 minutes or refrigerate. For a thinner version, keep it warm. Can be stored in the fridge for up to 4 days.
