  • 1 cup cottage cheese 2 percent or full fat preferred for creaminess
  • 1 cup grated cucumber about 1 small cucumber
  • 1 to 2 cloves garlic grated or minced
  • 1 to 2 tablespoons lemon juice start small and adjust to taste
  • 1 to 2 tablespoons chopped fresh dill or 1 to 2 teaspoons dried
  • 1 tablespoon olive oil optional but enhances flavor
  • to taste salt and black pepper for seasoning

Method
 

Preparation
  1. Grate the cucumber and squeeze out excess water using a towel or paper towels.
  2. Blend the cottage cheese until smooth, about 20 to 30 seconds.
  3. Stir in the grated cucumber, garlic, lemon juice, dill, olive oil, salt, and pepper.
  4. Taste and adjust seasoning, adding more salt or lemon if necessary.
  5. Chill for 10 to 15 minutes to let flavors meld before serving.

Notes

The dip can be made thicker by squeezing out more moisture from the cucumber or adding Greek yogurt. Consider adding herbs or spices for a personal twist.
