- Crack the eggs into a bowl and whisk until the yolks and whites are fully mixed.
- Stir in the cottage cheese. Do not overmix, just combine.
- Warm a nonstick skillet over medium low heat and add butter.
- Pour in the egg mixture. Let it sit for about 10 to 15 seconds.
- Use a spatula to gently push the eggs from the edges toward the center. Keep doing slow pushes as soft curds form.
- When the eggs look mostly set but still slightly glossy, turn off the heat. Season with salt and pepper.
- Plate immediately. This is where they finish cooking perfectly.
Notes
Use a nonstick pan for best results. Eggs sticking can be a hassle. If your cottage cheese is very wet, give it a quick stir to use the thicker part. Add veggies carefully, cooking them first to avoid watering down the eggs.
