Ingredients
  

Egg Mixture
  • 2 large large eggs
  • 0.25 cup cottage cheese Full fat is creamiest, low fat still works
  • 1 teaspoon butter or olive oil
  • 1 pinch salt
  • Black pepper, optional
  • Optional add ins: chopped chives, spinach, diced tomatoes, or a little shredded cheddar

Preparation
  1. Crack the eggs into a bowl and whisk until the yolks and whites are fully mixed.
  2. Stir in the cottage cheese. Do not overmix, just combine.
  3. Warm a nonstick skillet over medium low heat and add butter.
  4. Pour in the egg mixture. Let it sit for about 10 to 15 seconds.
  5. Use a spatula to gently push the eggs from the edges toward the center. Keep doing slow pushes as soft curds form.
  6. When the eggs look mostly set but still slightly glossy, turn off the heat. Season with salt and pepper.
  7. Plate immediately. This is where they finish cooking perfectly.

Notes

Use a nonstick pan for best results. Eggs sticking can be a hassle. If your cottage cheese is very wet, give it a quick stir to use the thicker part. Add veggies carefully, cooking them first to avoid watering down the eggs.
