  • 2 large Eggs Bind ingredients and help puff the pancakes
  • 1 cup Oats or flour Use oats for hearty texture or flour for more classic pancakes
  • 1 tbsp Baking powder For added fluffiness
  • 1 tsp Vanilla extract For flavor
  • 1 pinch Salt Enhances flavor

Method
 

Preparation
  1. In a bowl, mix cottage cheese and eggs until mostly combined. Blend for 10 to 15 seconds for a smoother batter if preferred.
  2. Stir in oats or flour, baking powder, vanilla, and salt. Let the batter sit for 2 minutes to thicken.
Cooking
  1. Warm a nonstick pan over medium heat and add a little butter or oil.
  2. Scoop batter in small circles onto the pan.
  3. Cook for about 2 to 3 minutes until bubbles form on top and edges look set. Flip and cook for another 1 to 2 minutes.
Serving
  1. Serve warm with your favorite toppings such as butter, maple syrup, Greek yogurt, or fresh fruit.

Notes

These pancakes can be made ahead of time. Store in the fridge for up to 3 days or freeze them. Reheat in a skillet or microwave. For fluffier pancakes, mix ingredients gently and ensure baking powder is fresh.
