  • 1 cup cottage cheese (full fat recommended) Full fat makes it taste more like dessert.
  • 2-4 tablespoons maple syrup or honey Start small and adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons almond flour or oat flour For that dough feel.
  • 1 pinch salt
  • 2-4 tablespoons mini chocolate chips Use mini chips for better distribution.
  • 1 tablespoon peanut butter (optional) Can be added for extra flavor.
  • 1 sprinkle cinnamon (optional) For added flavor.

Method
 

Preparation
  1. Blend the cottage cheese until it is completely smooth, without any lumps.
  2. Add maple syrup (or honey), vanilla, and salt. Blend again and taste to adjust sweetness.
  3. Add almond flour or oat flour and blend or stir until thick. If your blender struggles, transfer to a bowl and stir in the flour by hand.
  4. Fold in chocolate chips and serve immediately in little bowls or chill for 20-30 minutes for a firmer texture.
