  • 2 cups fresh corn kernels Cut from the cob or frozen, thawed and dried
  • 1 cup all-purpose flour For the batter
  • 1 tablespoon baking powder Helps puff the fritters
  • 1 large egg Binds the ingredients
  • 1/2 cup milk or buttermilk Just enough to bring the batter together
  • 1 teaspoon salt Do not be shy with salt
  • 1/2 teaspoon black pepper To taste
  • optional chopped green onions, paprika, or grated cheddar Additional flavor options
  • oil for frying (canola or vegetable) Use a neutral oil

Method
 

Preparation
  1. In a bowl, stir together flour, baking powder, salt, and pepper.
  2. In another bowl, beat the egg with a small splash of milk or buttermilk.
  3. Add the wet ingredients into the dry ingredients and stir until there are no dry flour bits. The batter should be thick.
  4. Fold in the corn and any extras like green onion or cheese.
Cooking
  1. Pour oil into a skillet to a shallow layer and heat over medium to medium-high heat.
  2. Drop a small bit of batter; if it sizzles, the oil is ready.
  3. Scoop batter by heaping tablespoons into the pan, gently pressing them to cook through.
  4. Fry until deep golden on one side, then flip and cook the other side.
  5. Move fritters to paper towels to drain. Keep warm in an oven if making multiple batches.

Notes

Use dry corn kernels and keep the batter thick to ensure crisp fritters. Do not crowd the pan for even cooking. Serve them with various dips or toppings.
