Preparation
- In a large bowl, stir together the rolled oats, shredded coconut, chocolate chips, brown sugar, and a pinch of salt.
- In a small saucepan over low heat, warm the coconut oil and maple syrup just until easy to stir. Stir in the vanilla once off the heat.
Mixing
- Pour the warm mixture into the bowl with the dry ingredients and stir until everything is evenly coated.
- Line an 8x8 pan with parchment paper and press the mixture down firmly.
Chilling
- Pop the pan in the fridge for at least 1 to 2 hours, then lift it out using the parchment paper and slice it into squares or chunks.
Notes
Store leftovers in an airtight container in the fridge for up to a week. Can freeze for up to 2 months. Adjust sweetness and texture by varying ingredients.
