Ingredients
  

Dry Ingredients
  • 2 cups Rolled oats Not quick oats
  • 1 cup Unsweetened shredded coconut Adjust according to preference
  • 1 cup Mini chocolate chips Regular chocolate chips can be used too
  • 1/2 cup Brown sugar Can reduce for less sweetness
  • 1/2 cup Maple syrup or honey Use maple syrup for a vegan option
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
Wet Ingredients
  • 1/3 cup Melted coconut oil or melted butter Use coconut oil for a dairy-free version
Optional Ingredients
  • 1/2 cup Chopped walnuts or pecans Add for extra crunch

Method
 

Preparation
  1. In a large bowl, stir together the rolled oats, shredded coconut, chocolate chips, brown sugar, and a pinch of salt.
  2. In a small saucepan over low heat, warm the coconut oil and maple syrup just until easy to stir. Stir in the vanilla once off the heat.
Mixing
  1. Pour the warm mixture into the bowl with the dry ingredients and stir until everything is evenly coated.
  2. Line an 8x8 pan with parchment paper and press the mixture down firmly.
Chilling
  1. Pop the pan in the fridge for at least 1 to 2 hours, then lift it out using the parchment paper and slice it into squares or chunks.

Notes

Store leftovers in an airtight container in the fridge for up to a week. Can freeze for up to 2 months. Adjust sweetness and texture by varying ingredients.
