Ingredients
  

For the blue tea
  • 2 tablespoons dried butterfly pea flowers Can be found in Asian grocery stores or tea shops.
  • 1 cup hot water Used for steeping the flowers.
  • 2 to 3 tablespoons honey or simple syrup Adjust to taste.
For the lemonade
  • 1 cup cold water or sparkling water Use sparkling for a fizzy drink.
  • 3 to 5 tablespoons fresh lemon juice Add more if you like it tart.
  • Ice For serving.
  • Lemon slices Optional, for garnish.

Method
 

Preparation
  1. Steep the butterfly pea flowers in hot water for 5 to 8 minutes until the tea is a deep blue.
  2. Strain out the flowers. While the tea is still warm, stir in your sweetener until fully dissolved.
  3. Let the tea cool down, you can pop it in the fridge to speed it up.
Assembly
  1. Fill a glass with ice. Pour in the blue tea about halfway.
  2. In a separate cup, mix lemon juice with cold water or sparkling water.
  3. Slowly pour the lemon mixture into the glass, watching it shift from blue to purple to pink.
  4. Taste and adjust the flavor, adding more lemon for tartness or more sweetener for smoothness.

Notes

You can prepare the blue tea up to 2 days ahead and store it in the fridge. Mix the lemon part just before serving for the best color. If completely mixed and stored, it may settle into a more uniform purple, but will still taste great.
