Preparation
- Steep the butterfly pea flowers in hot water for 5 to 8 minutes until the tea is a deep blue.
- Strain out the flowers. While the tea is still warm, stir in your sweetener until fully dissolved.
- Let the tea cool down, you can pop it in the fridge to speed it up.
Assembly
- Fill a glass with ice. Pour in the blue tea about halfway.
- In a separate cup, mix lemon juice with cold water or sparkling water.
- Slowly pour the lemon mixture into the glass, watching it shift from blue to purple to pink.
- Taste and adjust the flavor, adding more lemon for tartness or more sweetener for smoothness.
Notes
You can prepare the blue tea up to 2 days ahead and store it in the fridge. Mix the lemon part just before serving for the best color. If completely mixed and stored, it may settle into a more uniform purple, but will still taste great.
