  • 4 pieces Chicken thighs or breasts Thighs stay juicier; breasts can be used but monitor cooking time.
  • 1 cup Coca Cola Use regular Coca Cola for best results.
  • 1/4 cup Soy sauce
  • 4 cloves Garlic, minced Can also add ginger for extra flavor.
  • 2 tablespoons Oil for the pan For searing the chicken.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Optional Add-Ins
  • 1 teaspoon Ginger (optional)
  • 1/4 cup Green onions (optional)
  • 1/4 teaspoon Chili flakes (optional) For spice.
  • 1 squeeze Lime (optional) For a citrusy touch.
  • 1 tablespoon Sesame seeds (optional)
  • 1 splash Vinegar (optional) For a sharper finish.

Method
 

Preparation
  1. Pat the chicken dry and season with salt and pepper.
  2. Heat a skillet with a little oil, then sear the chicken until golden brown on both sides.
Cooking
  1. Lower the heat and add minced garlic, then pour in Coca Cola and soy sauce.
  2. Simmer uncovered, turning the chicken occasionally until the sauce reduces and becomes glossy.
  3. Ensure the glaze is thick enough to cling to a spoon before serving.

Notes

The sauce thickens as it cools, so it works well as leftovers. Can be served with rice or noodles, and various vegetables.
