Preparation
- Make the spiced honey syrup: Simmer 1/2 cup honey with 1/2 cup water, 1 cinnamon stick, and 2 whole cloves for 5 minutes. Cool, strain, and bottle.
- Chill your highball glass in the freezer for about 10 minutes.
- In the chilled glass, add whisky, lemon juice, cranberry juice, and spiced honey syrup. Add bitters.
Mixing
- Add ice and stir gently for about 10 seconds to chill and mix. Do not over-stir.
- Top with club soda, pouring against the side of the glass to maintain bubbles.
Garnishing
- Garnish with an orange peel, drop in cranberries, and tuck in a rosemary sprig.
Notes
Use large, clear ice to reduce melting and maintain the drink's liveliness. Store syrup in the fridge for up to a week.
