Ingredients

For the cocktail
  • 2 ounces Whisky Bourbon is preferred for warmth.
  • 3/4 ounce Fresh lemon juice For brightness.
  • 1/2 ounce Cranberry juice Use unsweetened if possible.
  • 1/2 ounce Spiced honey syrup Make by simmering equal parts honey and water with a pinch of cinnamon and clove.
  • 2 dashes Angostura bitters Optional for added flavor.
  • 2-3 ounces Club soda Very cold, or use dry ginger ale for a sweeter drink.
  • 1 large cube Ice Big cubes keep the fizz alive.
  • 1-2 pieces Orange peel, cranberries, and rosemary sprig For garnish.

Method

Preparation
  1. Make the spiced honey syrup: Simmer 1/2 cup honey with 1/2 cup water, 1 cinnamon stick, and 2 whole cloves for 5 minutes. Cool, strain, and bottle.
  2. Chill your highball glass in the freezer for about 10 minutes.
  3. In the chilled glass, add whisky, lemon juice, cranberry juice, and spiced honey syrup. Add bitters.
Mixing
  1. Add ice and stir gently for about 10 seconds to chill and mix. Do not over-stir.
  2. Top with club soda, pouring against the side of the glass to maintain bubbles.
Garnishing
  1. Garnish with an orange peel, drop in cranberries, and tuck in a rosemary sprig.

Notes

Use large, clear ice to reduce melting and maintain the drink's liveliness. Store syrup in the fridge for up to a week.
