Ingredients
  

Main Ingredients
  • 6 to 7 cups cubed bread (French, sourdough, or sandwich) Use slightly stale bread for better soaking.
  • 1 pound breakfast sausage, cooked and crumbled
  • 8 large eggs Season with salt and pepper.
  • 2 cups milk (whole milk preferred)
  • 2 cups shredded cheddar cheese Or a blend of your choice.
  • to taste salt and pepper
  • optional garlic powder, onion powder, paprika, diced peppers, green onions Add extra seasonings as desired.
  • as needed butter or cooking spray for the dish

Method
 

Preparation
  1. Grease a 9 by 13 baking dish and add the bread cubes in an even layer.
  2. Brown the sausage in a skillet, then drain any extra grease and sprinkle it over the bread.
  3. Add about 1 and a half cups of cheese on top, reserving the rest for later.
  4. In a bowl, whisk together the eggs, milk, salt, pepper, and any optional seasonings, then pour over the bread mixture slowly.
  5. Press down gently with a spoon so the bread absorbs the mixture, cover, and refrigerate for at least 4 hours or overnight.
Baking
  1. Preheat the oven to 350°F (175°C) and take the casserole out of the refrigerator.
  2. Bake uncovered for 40 to 50 minutes, sprinkling the remaining cheese on top during the last 5 to 10 minutes.
  3. Let rest for 10 minutes before slicing to help it set.

Notes

For best results, use slightly stale bread. Season the egg mixture well for added flavor. Bake until the center is fully set. Serve with customizable toppings if feeding a crowd.
