  • 1 pound breakfast sausage
  • 1 small onion, chopped (optional) Can be omitted for those who do not like onions.
  • 6 cups bread cubes (French bread or sandwich bread) Slightly stale bread works best.
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups milk Whole milk makes it richer, but any milk works.
  • 1 teaspoon salt
  • 1 half teaspoon black pepper
  • 1 teaspoon garlic powder (optional) Adds extra flavor.
  • Butter or cooking spray for greasing

Method
 

Preparation
  1. Brown the sausage in a skillet. If using onion, cook it with the sausage until it softens. Drain excess grease if necessary.
  2. Grease a 9×13 baking dish. Add the bread cubes in an even layer.
  3. Sprinkle the cooked sausage over the bread, then add the cheese on top.
  4. In a bowl, whisk together the eggs, milk, salt, pepper, and any extras like garlic powder. Pour it evenly over the mixture.
  5. Cover and refrigerate overnight, or at least for 30 minutes if in a hurry.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Bake uncovered for about 45 to 55 minutes, or until the center is set and does not jiggle. If the top is browning too quickly, loosely cover with foil for the last 10 minutes.
  3. Let it rest for 10 minutes before cutting to ensure clean slices.

Notes

For best texture, use slightly stale bread. Do not skip the resting time after baking.
