Ingredients
  

For the Marshmallows
  • 12 pieces jumbo marshmallows Best for popping onto sticks.
  • 12 pieces lollipop sticks or popsicle sticks Use striped ones for extra holiday flair.
For the Chocolate Coating
  • 1 cup chocolate chips or melting wafers White, milk, or dark chocolate works well.
  • 1 teaspoon coconut oil or vegetable shortening To thin the chocolate if necessary.
  • optional peppermint extract or colored candy melts For flavor and festive color.
For Decoration
  • as needed holiday sprinkles For classic decoration.
  • as needed crushed peppermint or candy canes For a fresh crunch.
  • as needed mini M&Ms or red hots A colorful topping option.
  • as needed sanding sugar or toffee bits For added texture and sparkle.

Method
 

Preparation
  1. Insert a stick into the center of each jumbo marshmallow, making sure it's secure.
  2. Optional: Place the marshmallows in the freezer for 15 minutes to help solidify them.
Chocolate Preparation
  1. Melt chocolate in a microwave-safe bowl, heating for 30 seconds, stirring, and then continue in 15 second intervals until melted.
  2. Add coconut oil or shortening if the chocolate is too thick, and optional peppermint extract or colored candy melts for flavor and color.
Assembly
  1. Dip each marshmallow into the melted chocolate, allowing excess to drip off.
  2. Place the chocolate-covered marshmallow on parchment paper and work quickly to decorate with your choice of toppings while the chocolate is still wet.
  3. Let the marshmallow pops set until the chocolate is firm.

Notes

Store the marshmallow pops in an airtight container at room temperature for up to four days. Display them in a mug or mason jar filled with rice or beans for a charming presentation.
