Method

Preparation
  1. Roll out the sugar cookie dough to about half an inch thick.
  2. Cut the dough into festive shapes using cookie cutters.
  3. Insert a lollipop stick or skewer into the base of each cookie and pinch the dough around it for support.
  4. Place cookies on a parchment-lined baking tray and freeze for 10 minutes.
Baking
  1. Bake the cookies in a preheated oven at 350°F until the edges are golden brown.
  2. Cool completely after baking.
Decorating
  1. Melt the chocolate in a microwave-safe bowl.
  2. Dunk the cooled cookie pops into the melted chocolate, ensuring they are well coated.
  3. Immediately sprinkle with assorted Christmas sprinkles before the chocolate sets.
  4. Let the decorated cookie pops set on wax paper.
  5. Enjoy immediately or store for later.

Notes

Chilling the dough is essential to keep the sticks in place. You can make these a day in advance and store them in an airtight container at room temperature. For vibrant colors, use colored candy melts instead of regular chocolate.
