Ingredients
  

Cookie Dough
  • 1 cup unsalted butter, softened Can microwave for 30 seconds if forgotten to soften.
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1/2 cup unsweetened cocoa powder Pick a good quality cocoa.
  • 1/4 teaspoon salt A pinch is sufficient.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Soften the butter and cream it together with sugar until fluffy.
  3. Add in the egg and vanilla extract, mixing well.
  4. In a separate bowl, combine flour, cocoa powder, and salt, then gradually stir into the wet ingredients.
  5. If dough is too soft, chill in the fridge for 10 minutes.
Baking
  1. Fill the cookie press with the dough, using your desired disc shape.
  2. Press out the dough onto ungreased baking sheets.
  3. Bake for about 8-9 minutes or until the tops no longer look wet.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For variety, try adding in espresso powder, rolling the edges in sprinkles, or pressing in caramel candies mid-bake. These cookies stay soft and can be frozen in an airtight container.
