Chocolate Pecan Turtle Bars

Ingredients
  

Crust
  • 1.5 cups crushed graham crackers (or digestive biscuits)
  • 6 tablespoons melted butter
  • 2 tablespoons brown sugar
Pecans
  • 1.5-2 cups chopped pecans Save a small handful for sprinkling on top.
Caramel layer
  • 1 can sweetened condensed milk (14 oz)
  • 1 cup caramel bits or soft caramels
  • 2 tablespoons butter
  • 1 pinch salt
Chocolate layer
  • 1.5 cups semi sweet chocolate chips
  • 1 teaspoon coconut oil or 1 tablespoon butter Helps it melt smoother.
Optional
  • 0.5 teaspoon vanilla extract Added to the caramel for extra flavor.
  • flaky salt For topping, optional.

Method
 

Prep and bake the crust
  1. Preheat your oven to 350 F. Line your pan with parchment paper.
  2. Mix the crushed graham crackers, melted butter, and brown sugar in a bowl until it looks like wet sand. Press it into your pan firmly.
  3. Bake for 8 to 10 minutes, just until it smells toasty.
Make the caramel pecan layer
  1. In a saucepan on low heat, combine sweetened condensed milk, caramel bits, butter, and salt. Stir until melted and creamy.
  2. Stir in most of the chopped pecans. Pour over the warm crust and spread gently, sprinkling saved pecans on top.
Add the chocolate and chill
  1. Melt chocolate chips with coconut oil in the microwave in 20-second bursts, stirring each time.
  2. Pour the melted chocolate over the caramel layer and spread it out.
  3. Chill the bars in the fridge for at least 2 hours before cutting.
  4. Use a sharp knife for cutting and wipe it clean between slices.

Notes

These bars are flexible, can be made in different pan sizes for varying thickness, and store well in the fridge or freezer.
