Ingredients
  

Dry Ingredients
  • 1 cup all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons sugar Use 3 tablespoons for a sweeter pancake.
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup milk Dairy or unsweetened almond milk works great.
  • 1 large egg
  • 2 tablespoons melted butter or neutral oil
  • 1 teaspoon vanilla extract
  • 1/3 cup chocolate chips Optional; for extra chocolate flavor.
Chocolate Sauce
  • 2 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1 splash vanilla

Method
 

Preparation
  1. In one bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, and salt.
  2. In another bowl, whisk together the wet ingredients: milk, egg, melted butter, and vanilla extract. If using chocolate chips, fold them in at the end.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined. A few lumps are okay.
  4. Let the batter sit for 3 to 5 minutes while heating the pan.
Cooking
  1. Heat a nonstick pan or griddle on medium to medium-low. Lightly butter the pan and pour about 1/4 cup of batter for each pancake.
  2. Cook until bubbles form on the surface and the edges look set, then flip and cook until the second side is springy.
Chocolate Sauce
  1. In a small saucepan over low heat, whisk together cocoa powder, sugar, and milk until smooth.
  2. Add butter and a splash of vanilla, stirring until glossy. Adjust thickness with more milk if necessary.

Notes

Try toppings like whipped cream, fresh fruit, or nuts for variety. You can prepare the dry ingredients ahead of time for quicker assembly in the morning.
