Ingredients
  

Burrito Ingredients
  • 4 large large tortillas Burrito size works best.
  • 2 cups cooked rice White, brown, or cilantro lime.
  • 1 lb chicken (breasts or thighs) Thighs are juicier.
  • 1 can black beans Optional but very filling.
  • 1 cup shredded cheese For filling.
  • 2 cups lettuce or cabbage For crunch.
  • 1 cup pico de gallo or salsa For topping.
  • 1 piece lime wedges For serving.
Chipotle Sauce
  • 1/2 cup mayo or Greek yogurt Base for the sauce.
  • 1 tbsp adobo sauce From a can of chipotle peppers.
  • 1 tsp garlic powder
  • 1 pinch salt
  • 1 tbsp lime juice Freshly squeezed.

Method
 

Preparation
  1. Season chicken with salt, pepper, chili powder, and a little cumin.
  2. Cook the chicken in a skillet with a splash of oil until done, then chop or shred.
  3. Toss the chicken with a couple spoonfuls of the creamy chipotle sauce to coat.
  4. Warm the tortillas for about 10 to 20 seconds to prevent cracking.
Assembly
  1. Layer rice, black beans (if using), saucy chicken, cheese, lettuce, and salsa on the tortillas.
  2. Fold in the sides of the tortillas, roll them up tight, and optionally toast in a dry skillet until crisp.

Notes

Warm tortillas to avoid tearing. Don't overfill to prevent burrito blowouts. Balance wet and dry ingredients. Toast for a crispy finish.
