Ingredients
  

For the Chicken
  • 1 lb boneless chicken thighs Juicy option, but boneless breasts can be used.
For the Rice
  • 1 cup long grain white rice Jasmine rice works well. Avoid quick cooking rice.
  • 2 cups chicken broth Adds flavor to the rice.
For the Sauce
  • 1/4 cup soy sauce Low sodium recommended.
  • 1 tbsp oyster sauce or hoisin For added sweetness (optional).
  • 2 cloves garlic Minced.
  • 1 tbsp fresh ginger Minced.
  • 1 tbsp brown sugar or honey For balance and sweetness.
  • 1 tbsp rice vinegar or lime juice For acid.
For the Vegetables
  • 1 cup mixed vegetables Frozen peas, diced carrots, bell pepper, corn, or chopped broccoli.
For Garnish
  • 2 tbsp green onions Chopped.
  • 1 tbsp sesame oil For aroma.
  • chili garlic sauce or sriracha For optional heat.

Method
 

Preparation
  1. Brown the chicken in a heated skillet with a little oil for a few minutes until colored. Remove and set aside.
  2. In the same pot, sauté minced garlic and ginger for about 30 seconds.
  3. Add rice to the pot and toast it for 1 minute, stirring to coat with flavors.
  4. Pour in chicken broth and sauce mix, scraping the bottom for flavors. Bring to a gentle simmer.
  5. Return the chicken to the pot, cover, and cook on low heat until the rice is tender.
  6. Near the end, add quick cooking veggies like frozen peas or corn.
  7. Finish with a drizzle of sesame oil and garnish with green onions and optional chili sauce.

Notes

Rinse the rice quickly and drain well to maintain texture. Adjust soy sauce to taste at the end.
